    • Chewy Rolo Cookies

      Rolo Ingredients

      If you are looking for something quick and easy (and tasty) to make for the big game or Valentine’s Day then give this recipe a try.  There are only 4 ingredients and they are not labor intensive to make at all.

      Ingredients

      1 box Devil’s Food cake mix (I like Duncan Hines)

      3 eggs

      1/3 cup vegetable oil

      3 packs of Rolos

      Directions

      Combine cake mix, eggs and oil in a large mixing bowl.  Place plastic wrap over top of bowl and refrigerate it for at least 2 hours to overnight.

      When ready to bake, preheat oven to 350 degrees.  Unwrap 12 Rolos at a time and then spray hands with non-stick cooking spray because the batter can be a little sticky.  Grab a tablespoonful of cookie dough and place one Rolo in the center, add a bit more dough to completely cover the Rolo and roll into a ball.  Continue to make 11 more cookies and place on cookie sheet lined with parchment paper.  Bake for 10-15 minutes.  If you like your cookies a little chewy then go for the shorter time and if you like them a little more crispy go for the full 15 minutes.  Take out of oven and allow to cool for 5 minutes on cookie sheet before carefully removing with a spatula.  Store in an airtight container for up to 5 days.

      Saldo_Bottle

      A little spice on a cold evening can make the long winter season a little more bearable.  This wine tastes of dark fruit with a peppery finish.  Saldo comes from the same winemakers as The Prisoner.  Just like Prisoner, this wine is smooth and robust.  It’s a Zinfandel and the grapes come from five different regions on the California coast. A smattering of grapes combined to make this wine makes much more sense in the name because Saldo means “from here and there.”

      This bottle would be perfect for a romantic dinner in February paired with smoked or spicy meats and maybe a chocolate lava cake for dessert.  You can find this simple, lovely bottle at Costco for $25.

    • Bacon Mac And Cheese

      Mac and Cheese

      This is the perfect cold weather meal.  You can add anything you like to make it even more flavorful – lobster, blue cheese, rotisserie chicken, but how can you go wrong with bacon?

      Another plus is that you can make this a day or two in advance.  You can serve it for a dinner party or a simple family night meal.

      Bacon Mac And Cheese

      Ingredients:

      1 pound elbow macaroni

      4 cups milk (skim, 2% or whatever you have on hand)

      1/2 cup flour

      8 Tb butter, divided

      6 ounces shredded Gruyere cheese

      8 ounces shredded sharp cheddar

      1 tsp nutmeg

      1/2 tsp black pepper

      1/2 pound applewood smoked bacon, cooked and crumbled

      5 slices bread, with crusts cut off (I used wheat)

      Directions:

      Bring a large pot of salted water to boil.  Add pasta and cook until al dente. Drain and set aside.

      Meanwhile, melt 6 Tb butter in another large, heavy bottomed pot on medium heat.  Add flour and cook a minute or two, stirring constantly.  Whisk in 4 cups milk and stir until sauce has thickened.  It should cover the back of a wooden spoon.  Then add 1 Tb salt, the black pepper and nutmeg.  Take the sauce off the heat and add the shredded cheese and bacon. Stir in pasta and pour into a rectangular baking dish (9×13).

      Melt remaining 2 Tb butter in microwave.  Put bread slices into a food processor and pulse until mixture is crumbly.  Add bread crumbs to melted butter and pour over top of macaroni and cheese.  Bake in oven for 35 minutes at 375 degree or until top is browned and mixture is bubbly.

      To make in advance, follow above steps, store in refrigerator and bake for 40-50 minutes.

      Running

      This is not a post about resolutions.  Actually, I hate gyms in January because of the crowds that gradually dwindle (and they always do) by February.  Today, the focus is on running.

      Back in the day, I did my fair share of 5 and 10ks.  I even ran a half marathon and that’s when the fun stopped and my knees started hurting so I took it easy for a while.  A year later, I signed up for the Chicago Triathlon and the run at the end sucked BIG TIME.  The pain in my knees was so bad that I walked most of that race and felt my face burn as men as old as seventy passed my twenty-something ass.  Awesome.  Not that I was competitive or anything.  From then on, I ran every now and then, but I never signed up for any races and most of the runs were still painful…until now.  

      Yep, back in the saddle again.  It feels pretty good too!  I am energized instead of completely drained after working out and excited to report that I signed up for my first race in more than 10 years (gulp) with some friends.  

      My favorite part about running is the way the music motivates me; it makes me feel light, almost like I’m floating across the ground.  You know that feeling?  Believe me, that doesn’t happen every time I run.  Some days the feet are dragging, my shoulders are slumped and the last thing I feel like doing is going for a run, but those are the days you do what you can and just move on.
