      Jalapeno Pesto

      This recipe took me one year to make.  Correction, I have known about this recipe and I was scared to try it.  Let me be honest.  I am not a great cook.  I can follow a recipe and usually the food turns out fine, but I am not an avant garde chef like some people… like the person who created this tasty recipe.  She calls it Jalapeno oil, but when I made it the consistency reminded me of the pesto I make each summer so I am calling this Jalapeno Pesto.  Whatever you want to call it it is a game changer for all sorts of Mexican food.  Drizzle it over fish to make fish tacos, toss it with grilled chicken or steak for fajitas or just serve it in a bowl and let people dip into it with chips and veggies.  So back to why I put off trying this recipe.  I was shown how to make it, but there were no exact measurements given.  A  little of this, a dash of that which is great for someone who is not a type A, but I am the baker-sort who knows that if even the teeniest measurement is off in her baking, you might as well throw out the whole batch.  It’s a little hard to let go of that when I cook, but I am slowly getting better.

      This is the perfect recipe to just have fun with it.  I started with the basics which is jalapeno peppers, garlic, green onions and some vegetable oil.  Another “aha” moment when I was learning to make this is you don’t need to use the more expensive olive oil, vegetable oil does the trick.  Season with salt and pepper and you’re done.  You could also add a splash of freshly squeezed lime juice or grate in some lime zest and some chopped cilantro.  This mixture will have a nice kick to it, but if spicy is not your thing you could always remove the seeds and the pith (white membrane inside) from the jalapeno to make it mild.

      Jalapeno Pesto

      • Servings: 1 cup
      • Time: 5mins
      • Difficulty: easy

      Ingredients

      3-4 jalapeño peppers, roughly chopped and seeded if you prefer this less spicy

      2 cloves of garlic, peeled and whole

      3 green onions, roughly chopped and discarding the very end of the greens

      vegetable oil

      salt and pepper

      Directions

      1. Add first 3 ingredients to a food processor and puree.

      2. With the processor on, add the vegetable oil through the top starting with 1/4 cup and adding more until it is the consistency you would like it.

      3. Season to taste with salt and pepper.

      Black Cat

      Although this post sounds more appropriate for the month of October, I could not wait that long to write about it.  This wine proves that I still have a loooong way to go on learning more about wine and the foods to pair it with.

      Normally, I like a big, bold, classic Napa red like a Cabernet, but this wine was much more subtle, refined and, at times, a tad sophisticated for my inexperienced palette.   Should this intimidate any wine drinkers?  Hell no!  I say drink on and keep learning.

      So back to the wine.  This was a 2012 Cabernet Franc that we enjoyed over the weekend with a good friend and his trusty canine friend Mr. Jensen.   The color is deep and beautiful and the taste was smooth and very easy to drink.  We planned to enjoy it with fresh steak filets, but the bottle was gone long before we even fired up the grill.

      There is a great story behind the winemaker and I may have to save that for another post because we would like to visit her vineyard at some point in the not-too-distant future.

      This wine can be purchased if you are a member of The Black Cat Wine Club, but there are others on the Black Cat website that range between $55 -$75.

      Prisoner Wine

      Last week, a few of the moms met up for some wine, awesome thin-crust pizza and more wine.  One of them highly recommended trying The Prisoner and after six of us downed two bottles, we came to one conclusion: it was uh-mazing!  This wine is a blend of Zinfandel, Cabernet, Petite Sirah and Charbono.  Charbono is new to me and it has a long history, but I won’t bore you with the details.  😉  The flavors we tasted were espresso, fig and lots of berries; it pours ultra dark into your glass.   If you like a bold red, then this one’s for you.

      The Prisoner

      Some interesting facts about the wine label because I wanted to know how the name of the wine came into existence:  The image on the wine bottle is an etching that is dark and unsettling depicting a prisoner during the war between France and Spain.  The artist is Francisco de Goya and the etching is entitled, The Little Prisoner.  The original winemaker’s parents gave him this etching when he was 12 years old.  It obviously left quite an impression on him.  I don’t think it’s a coincidence that this wine is released each year in limited quantities on Halloween either.

      Cakebread Cabernet

      To top off Father’s Day weekend (golf on Saturday, watching the U.S. Open both days…yes it has evolved into a celebratory weekend) my husband grilled steaks and opened a bottle of 2012 Cakebread Cabernet reserved just for this occasion.  With this strange weather and high humidity, I put the bottle into the fridge about 45 minutes before we drank it and my husband and I both noticed how the wine “opened up” as it gradually warmed to room temperature.  It was dark and delicious and I would drink it again, and again, and again.

      We learned from a series last fall on PBS (okay, I coaxed him to watch it with me, but in return I will watch car and golf shows) that Napa had a great year in 2012.  It was hot and dry during the day and cool at night which made the grapes more concentrated and created wines that were chart toppers for ratings.  2015 is proving to be the same so far with the dry spell they’ve had out there.  Let’s hope the harvest season reaps the same outstanding grapes!

      On a personal note, I want to thank my husband for being a great father and role model to our children.  He’s the hardest working guy I know and although he travels a lot for work, his mind is often on his family.  Over the years and while on the plane, he has created a book of memories for our two daughters listing their first triumphs, challenges and added some of his own advice for the future.  The plan is to give these to them when they are old enough to appreciate and understand it more.  For our oldest, he is up to page 70 and for our youngest, he is at 50 pages.  That is outstanding!  Chris, we love you very much!
