      Canning Pickles

      Labor Day Weekend is always bittersweet.  I look forward to cozy sweaters, vibrant colored trees dotting the landscape and my favorite of all holidays…Halloween!  BUT, I will miss being able to slip on sandals effortlessly and enjoy days at the pool and park.

      This post is like Canning 101 for anyone who has never attempted the canning process before.  It is really not that complicated and when you hear the popping sound when the first jar sealed you will be hooked.  I took a class last summer that went over the basics like pickling cucumbers, making raspberry jam and a wonderful peach chutney so I am passing some of what I learned along to you.

      A few tools you will need :

      A plastic funnel

      Rubber tongs to submerge and remove the jars from the water bath

      Mason jars, lids and screw caps

      A large stockpot

      (I bought these items at Ace Hardware.  They are usually on sale this time of year.)

      Bread and Butter Pickles

      Makes 5 pint jars

      Ingredients

      8 cups sliced pickling cucumbers

      1 onion thinly sliced

      2 Tbs kosher salt

      2 cups cracked ice

      2 1/2 cups cider vinegar

      2 1/4 cups granulated sugar

      1/2 tsp turmeric

      1 tsp celery seeds

      1 Tbs mustard seeds

      1/8 tsp red chili flakes

      1/2 tsp black peppercorns

      3 bay leaves, crushed

       

      Directions:

      1.  Start by chopping your onions and pickling cucumbers and toss them into a bowl.

      2.  Add your salt and ice into the bowl and mix well.  Place another bowl with water or a heavy can on top and allow to sit at room temperature for 3 hours.

      3.  While the cucumbers and onions marinate, you can wash and sterilize your jars and lids.  I place the jars on a sheet pan and put them in a 225 degree oven for a half hour.  Note: the jars must be hot when you add the brine mixture or else they can crack.

      4.  To make the brine, combine the vinegar, sugar, turmeric, celery and mustard seeds in a large pot and bring to a boil.  Put a large separate pot on to boil with 6 inches of water.

      5.  Drain the cucumbers and onions and add them to the brine.  Bring it back to a full boil and immediately turn off the heat.

      6.  Evenly distribute the chili flakes, peppercorns and bay leaves between the jars.

      7.  Place the cucumbers and onions into the jars, packing them down tightly.  Fill the jars with the brine, leaving 1/2 inch of headroom.  Use a chopstick or knife to take out any air bubbles.

      8.  Wipe the rim and place the lid on the hot jar.  Carefully set the jars in the pot of hot water using the rubber tongs.  Cover and bring to a boil and process for 10 minutes.

      9.  Remove jars carefully from the water bath.  Place them on a wire rack to cool.  Make sure the jars seal properly.  You will hear the popping sound when that happens.  If they have not sealed, you can always place the pickles in the refrigerator and enjoy immediately.  For the ones that seal, place them in a cool, dry place and away from light.  Give them as gits this holiday season!

      Wait one week to enjoy your pickles.

      With football season beginning and the start of school today, I wanted to offer my very first giveaway to celebrate.  One lucky reader will win this Official NFL Game Ball from Wilson.  All I ask is that you post a favorite childhood memory of school, whether it was a particular subject, something amazing that happened at school or a favorite teacher, let’s reminisce a bit.

      I’ll go first.  My favorite childhood teacher was Mrs. Parrish in first grade.  She was always impeccably dressed, wore expensive perfume and left the biggest impression on me at a young age.  Her laughter was infectious.  Mrs. Parrish definitely made learning fun.

    • Quest For The Dress

      I don’t know about you, but I am in desperate need of a LBD (Little Black Dress).  There has been more than one occasion where this little number could have saved me some time and angst…ok, maybe not angst, but definitely some creative brainstorming to come up with a suitable, stylish outfit from my sad assortment of mom clothes hogging my closet.

      Roland Mouret is my new style hero to the rescue! He created a line for Banana Republic that exudes sophistication, timeless clean lines and a lovely feminine look.  Plus, it’s always fun to score designer looks for a fraction of the runway prices.

      I was cautiously excited when I woke up yesterday morning because the clothing line would be available in stores.  I was feeling the same way when Philip Lim had a line of cool, structured handbags at Target and those sold out in a matter of minutes.  I arrived at Target that day last spring late in the afternoon and could not find even one item that had the Philip Lim label.  I finally asked and found out from a sales clerk that his clothes and bags had been sold within twenty minutes and there was literally a line of women waiting for the store to open that morning.

      That experience haunted me a bit when I hopped online to see sadly that half of Roland’s dresses had sold out by 7:30 a.m.  I saw that you could reserve the dresses in stores and the nearest participating one was in Oakbrook- about 35 miles from where we live.  I was determined so I reserved the dresses and the girls happily hopped into the car with their breakfast-to-go (Goldfish crackers and bottled water) and we were off.

      We were lucky and the Chicagoland traffic was very light despite some areas under construction.  We arrived just a few minutes after the store had opened and all was quiet.  There were already a few women in dressing rooms looking for the same line that I was there for, but I was happily relieved to see that there weren’t any lines or fighting over sizing.  I tried both dresses on and my girls were very complimentary.  “Oh, Mommy I like that one. Oh, get that one too.”  They were right.  Both looked good.  I took pictures on my phone and sent them to my husband.  ‘Get the black and white one.  Very hot.’- he texted back immediately.  Hmmm…I bought both and decided to try them on at home.  I showed a friend who came over for lunch and she had a great idea to add some red shoes or a pop of color, but alas, she liked both too.  Thank you Debbie.  🙂

    • The Art of Writing The Thank You Note

      Thank you, Merci, Gracias, Grazie, Arigato, any way you say it it’s a phrase or word uttered to express gratitude.

      My last post sparked an idea: to focus on the process of writing a thank you note.  Many people today think that they are too busy or that these notes have become old-fashioned and therefore they don’t need to bother with this form of etiquette.  Wrong!  If people can take time out their busy schedules to do something for you, such as attending a party and come bearing gifts then it’s important to send out the message that you appreciate it.   It is apathetic and rude to think that thank you notes don’t matter anymore.

      Still with me?  Have I struck a chord?

      I recently received a thank you note for my thank you note.  How cool is that?! A mom who attended Sydney’s party said it was one of the nicest thank you notes she had ever received.  I know she was being sincere because I put some thought into my note.  She was gracious enough to help out with the birthday party and I wanted to let her know that I didn’t just take that effort for granted and it meant a lot to me.

      So, here are 5 ways to make writing thank you notes painless and even memorable among family, friends and colleagues.  Who knows, it could make you stand out enough to land that new client or get on your mother-in-law’s good side.  🙂

      1. Organize.  List who gave what at large birthday parties.  Whether you choose to open gifts while your guests are still there or you wait until after everyone has left your child’s party, make sure you make a list of which child gave which gift.  It will take the stress out of trying to recall who gave Bobby the red truck.  If you were interviewing or meeting with potential customers, make sure you grab everyone’s business card and write something on the back of each one to make your attention to detail stand out.

      2. Personalize.  Write about the gift and how you or, if it’s for your child, she or he will use it.  This is your time to dole out the compliments too.  ‘What a perfect gift for Sally.  She loves horses and the book you gave her has been found next to her while she sleeps on more than one occasion.  She loves looking at it before bedtime.’  Of course, don’t feel the need to make anything up, but grandparents or friends would be delighted to hear their gift made the recipient happy.  You could also have your child draw a picture on the card and sign his or her name.

      3. Stock up.  Buy plenty of stamps, envelopes and cards.  Do it now before the holidays hit and things get even busier.  You can use personalized stationary or cards with Thank You printed on the front.  Let your imagination and creativity go wild.  Try to make it reflect your personality somehow.  A woman I nannied for back in college….a long time ago…loved monkeys so her stationary always had a monkey on the front and people immediately knew who it was from when they received a card from her.

      4. Make time and delegate.  The task won’t seem as daunting if you carve out some time during the day or even write a few notes each evening in front of the T.V.  Have your children seal the envelopes, put on the stamps and take them out to the mailbox.  Try to get them out within a week or two of when the gift was received.

      5.  Sign off.  Some people struggle with how to end their correspondence.  Try these: Cheers, XO, Blessings and Prayers, Take care, Yours respectfully, Sincerely, or Your friend.

      Nobody ever said it was easy to leave a good lasting impression, but I promise you that if you put in the effort, these notes will make a positive difference in your life and others.  Besides, when has anyone ever said, “That b&tch sent me another thank you note.  That is the last time I will ever talk to her again!”
