      Happy Monday! Here is a recap of our Superbowl gathering from yesterday.  The menu consisted of: chili (thank you G), pasta salad (thank you Sylv) Polish sausage, baked ham and cheese sandwiches, meatballs, a bloomin’ onion loaf, hot swiss cheese dip with crumbled bacon, chocolate chip cookies, salted caramel cheesecake bars, Rice Krispie treats and adorable football and turf cupcakes (thanks Sylv).  All-in-all, entirely waaaay too much food, but still fun to try a little of everything. Too bad the game wasn’t exciting, but Bruno Mars had a spot-on performance and this is coming from a girl who changes the station every time his overplayed songs come on the radio (entirely not his fault).  Sorry Bruno.  I would love to see you in concert.

      The Superbowl XLVIII Commemorative ball.  This is my husband’s idea of accessorizing our entertainment center.  I admit that it looked sharp for the game.

      Here are the girls getting ready for the arrival of their friends. Sydney is sporting a 2 bar Jets helmet from the 1960s (left)and Olivia is wearing a throwback helmet from the 1950s (right). Unfortunately, I was not able to take as many photos of the food as I would have liked, but hey, catching up with friends is definitely more important.

      Baked ham and cheese sandwiches.  They were good, but maybe a bit too sweet so I would cut back on the brown sugar next time.  The recipe is below.

      Caramel Cheesecake bars.  These were awesome!  Recipe in tomorrow’s post. Promise!  Another great thing about game day-using low maintenance plastic utensils and paper plates and napkins.

      An easy game to whip up for the kids was Pin the Football On the Goal Post. Do I even need to mention that I got this idea from Pinterest?   Cut out the goal post using yellow construction paper, then just have the kids design and cut out their own footballs, attach some tape to the back, grab a blindfold and voilà! You’ve got yourself a fun highlight for their night.

      Now that football season is over let’s gear up for baseball…and warmer weather. Go Cubs!

      Bloomin’ Onion Bread

      Ingredients

      One round loaf sourdough bread

      1/2 cup melted butter

      1 tsp poppy seeds

      1/2 cup chopped green onions

      6 ounces sliced Monterey jack cheese

      2 tsp garlic salt

      Directions

      Preheat oven to 350 degrees. Slice sourdough loaf without cutting all the way to the bottom.  Turn loaf and cut crosswise creating little squares.  This part is a little tougher, but the sourdough is strong enough to take it. Place sliced cheese in between the bread squares that you just created. Combine melted butter with garlic salt, green onions, poppy seeds.  Pour mixture over sourdough bread.  Cover with aluminum foil. Bake covered for 15 minutes.  Take off foil and bake for another 10 minutes.

      Baked Ham and Cheese Sandwiches

      Ingredients

      16 white sandwich buns

      Honey baked deli ham

      Sliced Provolone cheese

      Topping

      3/4 cup melted butter

      3 tbs brown sugar 2 tsp yellow mustard or 1 tsp dried mustard

      2 tbs Worcestershire sauce

      1 tbs poppy seeds

      Directions

      Assemble ham and cheese sandwiches in a 9×13 pan. Combine melted butter, brown sugar, mustard, poppy seeds and Worcestershire sauce.  Pour mixture over sandwiches. Cover with aluminum foil and refrigerate for at least 2 hours if not overnight.  Do not allow to sit for longer than 12 hours or bread may be soggy. Preheat oven to 350 degrees.  Bake covered for 25 minutes.  Uncover and bake for another 5 minutes.  Serve warm.

    • A Survival Guide For The Rest Of Winter

      If you are like me you are itching for warmer weather, the ability to slip on some sandals and be on your merry way; not trudging through snow with biting wind nipping at your skin, slipping on ice with your hair blowing wildly all over your face-and this is just the little jaunt to the mailbox!  On the bright side, at least I am not writing the same line over and over again like poor Jack so things could always be worse.

      For this post, I am offering up some ideas to make it through the rest of winter.  Whether you have kids to entertain or not, hopefully you can find at least one new thing to try.  By all means feel free to toss in your two cents as well.

      Things to do:

      1. Sign up for free workshops for adults or kids at Home Depot or $2 craft classes for kids at Michael’s.  The cake decorating and other classes for adults are around $25 and up.  Or try cooking classes, a public speaking course or a self-improvement class.  My friend Megan and I did this a lot in high school when we became bored or were looking to meet Mr Right Now.

      2. Plan your summer vacation.  A girl can dream, can’t she?

      3. Watch the Winter Olympics in February.

      4. Make or buy your children’s Valentines to pass out at school.  While you’re at it, make reservations for dinner or plan a few romantic gestures for your significant other.  Good deeds improve your mood and never go unnoticed.

      5. Speaking of good deeds.  Perform some random acts of kindness.  Volunteer at church, a soup kitchen or help someone out who deserves a break.

      6. Have a spa day where you spend all day in PJs and do manis and pedis, deep condition your hair, exfoliate and lather lotion all over dry skin.

      7. Plan an Oscar party.  (extra credit-try to watch most of the movies nominated)

      8. Burn off some steam and/or energy.  Hit the gym or take the kiddos to an indoor trampoline.  It will get your endorphins pumping.  Chocolate and wine  do the same thing so you can do that too.

      9. Read some new books.  For adults there’s The Goldfinch that is now number one on the bestseller’s list.  For kids, try some humorous books such as these.

      10. Go to the movies.  Our local theater has offered deep discounts on Tuesdays and even free movies if you have a rewards card through them.

      11. Try out some new foods that you’ve never tasted before or new recipes you’ve been meaning to try.  I am referring to you Pinterest junkies!  🙂

      12. Go bowling.

      13. Try a new beverage.  Yes, I am talking alcoholic beverages.  It’s an excuse to invite some friends over to sample new wines, mixed drinks or whatever floats your boat.  For kids, use some sparkling water and add it to different flavored juices.  Toss in some raisins and perform a science experiment on how the carbonation makes them “dance.”

      14. Suck it up and head outside if it’s 30 degrees or above.  Make a snowman, an igloo, go sledding, skiing, snowboarding, ice skating or the zoo.

      15. Go shopping.  Personally, I found IKEA is extremely kid-friendly when I was there recently.  Kids eat free on Tuesdays, they have a reserved play area, low toilets and sinks, and gives you an excuse to grab some inexpensive things to spruce up or organize your space.

      16. I found this list of things to do in Chicago on Pinterest, but I’m sure there are unique things to do wherever you live.

      Whatever you do, don’t end up like Jack.  Hang in there, 52 days left until spring.

      It snowed today. The girls were busy piling stuffed animals on the foyer of the stairs and jumping carefully down into it.  I was bored so I decorated the mantle for Valentine’s Day and snapped pictures.

      I filled the hurricane candle holders with a bag each of conversation hearts; reserving a third bag entirely for the girls who were eyeing the candy like a pack of wolves.  If I ration them carefully, I can make it last all the way until Valentine’s Day.

      My husband and I received this heart ornament as a parting gift from our hotel in Mexico reminding us that part of our hearts will always stay at the resort.  That sweet gesture instantly brought tears to my eyes.  The staff at Las Ventanas are such lovely people.  We look forward to going back and collecting a few more in the years to come.

      The heart garland is from the Target dollar bin.  I contemplated making one myself, but it probably would have turned out like the “nailed it” pictures from Pinterest.  Plus, how can you beat one dollar?

      Time for some tea, a soft throw and a good book – Grimm’s Fairy Tales if you are wondering – and I was able to entice the girls to listen to a few stories before they yawned and went back to jumping.

    • Chocolate Chip Cookies

      I have to admit that the winter doldrums are starting to set in just a little.

      Even my youngest one is getting antsy.  I caught her in her bathroom the other day when things suddenly got too quiet.   (All of you moms know exactly what I am talking about.)  Imagine my surprise to see that she had covered her entire head in handsoap.  My startled expression made her burst into tears and she apologized profusely while I started up the shower and snapped a few photos for posterity.

      Baking is always a great way to lift everyone’s moods around here so 0ver the weekend I scanned Pinterest, cookbooks and magazines for tips on how to make the chewiest, tastiest chocolate chip cookies.  These will be perfect for game day.

      Chocolate Chip Cookies

      makes 16

      Note: for optimal flavor and to keep your cookies from becoming flat it is best to make these 1 day ahead and refrigerate.  

      Ingredients

      2 and 1/4 cups all-purpose flour

      1 tsp baking soda

      1 and 1/2 tsp cornstarch

      1/2 tsp salt

      3/4 cup (1.5 sticks) unsalted butter, melted

      3/4 cup brown sugar, loosely packed

      1/2 cup granulated sugar

      1 large egg plus 1 egg yolk

      2 tsp vanilla

      1/2 bag chocolate chunks (I used Nestle semi-sweet)

      Directions:

      Combine flour, baking soda, salt and cornstarch into a bowl.  Set aside.

      In a large bowl, whisk melted butter with both sugars until all lumps are gone.  Whisk in egg and egg yolk one at a time.  Lastly, add the vanilla.  Slowly add your dry ingredients to your wet ingredients and stir using a wooden spoon to combine.  Fold in chocolate chunks.  Cover the dough with plastic wrap and chill overnight.

      Take dough out of refrigerator and allow to soften at room temperature for about 10 minutes.

      Preheat oven to 325 degrees.  Line a baking sheet with parchment paper.   Scoop 2 heaping tablespoons and gently roll into a ball.  Place 8 cookies on sheet and bake for about 12 minutes.

      After removing cookies from oven allow them to cool on the baking sheet for 10 minutes.  This will keep your cookies in tact when you remove them from the sheet using a spatula.

      Cookies will stay fresh in a sealed container for about a week.

      Enjoy with a big glass of milk.

      Sydney was a little bummed when she first got off the bus today, but when I brought out the cookies, her and her bunny were all smiles for the camera.
