      How was your Mother’s Day?  Did you eat out?  Plant some flowers?  The weather was perfect here!

      I like to avoid the restaurant crowds by eating at home.  My daughters had lots of homemade presents waiting for me when I came downstairs from sleeping in so I looked through those while my husband poured my favorite coffee and served a mimosa alongside of it.  Ah, it felt like a vacation.

      Eggs Benedict is my favorite breakfast so Chris takes care of cooking the eggs, Canadian bacon and toasting the English muffins while I whip up the Hollandaise each Mother’s Day.  This sauce is the mother f-ing bomb!  Nothing beats homemade, but making it can seem like a tedious chore…until now.  You really only need 3 ingredients that are already in your fridge.  So what are you waiting for?  Be prepared to have your world rocked with this silky, custard-colored sauce drizzled over your eggs, asparagus or crab cakes.  You can also adapt this recipe to serve more by doubling, tripling it or whatever you need.

      Start off by filling your blender with hot water and set aside.  You can enjoy a mimosa while you do this too. 😉

      Heat up your butter on the stove until it’s foaming.  Like this.

      Dump out the water from the blender, wipe it dry and add some lemon juice and an egg yolk.  Blend thoroughly, then, with the blender on low, slowly add your melted butter until combined completely.  That’s it!  So easy.

      Easy Hollandaise Sauce

      • Servings: 2 people (who are each eating 2 eggs, muffins and Canadian bacons)
      • Time: 10 minutes
      • Difficulty: easy

      Ingredients

      1 and 1/4 sticks unsalted butter, cubed

      1 large egg yolk

      1 Tbsp lemon juice

      salt and pepper to taste

      Directions

      1. Fill a blender with hot water.  Set aside.
      2. In a small pan, melt butter over medium heat on stove until foaming.
      3. Discard all water from blender and dry out with clean towel.
      4. Put egg yolk and lemon juice into blender and blend until combined.
      5. With blender on low, slowly add melted butter.  Leave milky solids in pan.
      6. Season with salt and pepper.
      7. Serve immediately.

    • Wine On Wednesday: Pullus

      Have you ever tried wine from Slovenia?  I strongly encourage you to start if your answer was no.  We tried this beautiful Pinot Grigio at our last book club meeting and I can’t stop thinking about how perfect it will be to drink this summer.  In general, I’m always on the lookout for a good white and if one stands out I’ll always be sure to share it as I am now.

      Pullus wine is made in the city of Ptuj.  There are labyrinths beneath the city that cellar this wine since 1239!  The winery is Ptujska Klet and the winemaker is Bojan Kobal.

      If you are not typically a fan of Pinot Grigio, fear not, because this one will probably convert you.  The wine was a surprising color like pink grapefruit juice when poured.  It tasted slightly effervescent, with floral notes and a creamy finish.  A very pleasant wine to drink!

      You can find this stunner for about $15 at most wine shops.  (Don’t be afraid to ask if they can order it for you too!)  Many thanks to Dijana for introducing us to all the wonderful wines from the Balkan region!  Na zdravje! I think that’s cheers in Slovenian.  😉

      Happy Easter weekend to you!  To get motivated for spring and warmer weather in general, I’ve put together my annual list of items I’d like to wear this season.  Which also begs the question, what’s on your wish list this spring?

      Blush colored tops and bottoms are popping up everywhere.  Well, why not?  The color is flattering on practically every skin tone and looks so classic and feminine.  I just picked up a pair of Harper cropped pants from Old Navy in blush, black and cobalt.  Right now they’re 40% off and, no I do not get any credit or freebies for sharing this information.  I just like to share the good deals when I hear them.

      Here are some more examples of the “it” color for spring.

      “Florals? For spring? Groundbreaking.” Miranda from the Devil Wears Prada said it so well I couldn’t resist inserting that line.  I finally did it though, I took the plunge and bought a pair of floral pants.  Again, from Old Navy.  The price was too good to pass up and I loved the pattern.  It wasn’t too hippie girl standing in a field of wheat while flinging her arms out and twirling around as the camera pans to an aerial view type of print.  You know what I’m talking about, right?  The carefree, light florals that you see on cute sundresses looks great in the store or with a denim jacket.  Until I try it on and realize that I’m just never gonna be that carefree girl standing in the field.

      These pants are much more, ‘me.’  Tailored, black background with bold floral colors.  Love it.  In fact, this was on my wish list last year.

      This not so much.

      With warm weather, I love wearing lots of shoes that are easy to slip on and feel comfortable.  I love my Toms, but I found a pair of tan quilted slip ons at Payless that mix it up every now and then.  The quilting on the shoes is another trend I noticed while I was subbing at our local middle school.  Not that I want to dress like an 8th grader, but some of those girls know their fashion and it’s good to break out of the mom rut that I tend to wallow in at times.

      For $19.99, you can’t beat the price.  Just wear them with no-show socks until they are fully broken in to avoid blisters.

      Nike Flex Trainer

      I’d also love a pair of black Nike Trainers.  I usually go bright with my runners, but these would be versatile enough to wear with jeans on an errand-filled Saturday.

      Moving on to (gulp!) swimwear.  There are so many two pieces out there and although a lot of people can rock this look, including some who have a great body image, but don’t spend every waking minute at the gym (more power to ya!), I’m just not comfortable in one.  Here are a couple of flattering one-pieces I’ve had my eye on for splashing around the pool with the kids.

      I like the high neckline on this Michael Kors one piece.  It protects the delicate skin on your decolletage.

      Lastly, a girl needs a new handbag every now and then.  I could use a break from my regular mom purse and my shoulders would agree!  So something lighter and with a pop of color seems the best choice.

    • Cheesy Appetizer

      Hello!  It’s been a while since I’ve written a post and eons since I’ve posted a recipe.  My brother passed this one along and I loved the simplicity and originality of it.  It’s sort of a fondue in a bread loaf.  I wish I could have taken more pictures, but this was as far we got.  Make this for a cozy night in with a glass of wine.  It’s also a perfect appetizer to serve when you want to impress your dinner guests.

      Cheesy Fondue Bread

      • Servings: 4-6 people
      • Time: 45 minutes
      • Difficulty: moderate

      Ingredients

      • loaf of French bread
      • 3 kinds of cheeses that melt- I used Gruyere, Camembert and Triple Cream Brie.  The original recipe mentioned Raclette, but I couldn’t find it.
      • Dried Rosemary
      • Carmelized onions (about 1 onion, though you won’t use it all)
      • Cooked bacon, crumbled
      • 2 Tb chopped parsley
      • 2 cloves minced garlic
      • 1/4 cup olive oil
      • 3 Tb grated Parmesan cheese

      Directions

      1. Using a knife, cut three squares out of the bread as seen in the picture above.  Be careful while cutting, as you will cut the bread into strips to use for dipping later on.
      2. In the first square, place slices of Camembert until bottom of bread bowl is covered completely.  Spoon in a thin layer of carmelized onions.  Add another layer of Camembert.  Add another layer of onions.  Add a final layer of the cheese.
      3. In the middle square, place sliced Gruyere until bottom of bread is covered.  Add a sprinkle of Rosemary.  Place another layer of Gruyere.  Add another sprinkle of Rosemary.  Put your final layer of Gruyere on top.
      4. For the last square, add your sliced Brie.  Continue to alternate Brie and bacon as you did in the squares above.
      5. In a small bowl combine, parsley, garlic, olive oil and Parmesan.  Drizzle over the top of the sliced bread that you pulled out for the squares.
      6. Bake in oven at 400 degrees for about 30 minutes.  You may need to cover with foil the last 10 minutes so the bread won’t burn.
      7. Serve immediately and enjoy!
