    • Remembering A Great Woman

      A week ago today, our family laid to rest an awesome and influencial lady- my husband’s grandma, Elvira Cavallari.  For fifty two years, her and her husband owned a family-run restaurant in Northfield called The Willow Inn Club.  My husband’s family lived above the restaurant and he started setting tables when he was six.  His family knows a thing or two about hard work.  When I met Elvira thirteen years ago, she told me to call her Grandma so I did.  She told my dad, who lost his mom to cancer a while back that he could call her Mom.  So he did.  That’s just who she was; she accepted everyone and always made us feel comfortable and welcome when we visited her home.

      Elvira taught me to make homemade spaghetti, gnocchi, pumpkin bread, sugar coated pecans, Italian chicken with peppers and so many other delicious recipes.  Her spirit lives on whenever we make one of them now.

      In a way, she inspired me to start this blog.  Her recipes were always unique and practically fail proof so I referred to them often when I started writing here just over three years ago.

      We miss you Elvira, but we know you are with many of your loved ones and looking out for us down here.  Cheers Grandma!

    • Iced Coffee – 2 Ways

      If you love coffee, and even if you don’t these two easy recipes may convert you.

      To make the recipe above, simply fill a glass with ice, add a splash of almond milk, a pinch of cinnamon and top with your favorite brewed coffee.  (I love Nespresso.)  Stir, sip and be on your merry way.

      Doesn’t this one look like a root beer float?  This recipe requires a blender.  Add a handful of ice, a scoop of protein powder (I like Arbonne chocolate) and brewed coffee.  Mix until cubes are crushed and it has the consistency of a slushy.  Mmmm!  Delicious!

    • Chilled Overnight Oatmeal

      Overnight_Oatmeal

      This breakfast is great if you’re looking for a satisfying, healthy and easy breakfast idea. You can eat it at home, in the office or on the go.  It will give you steady energy all morning and it’s the perfect cool option for those steamy summer days.

      Chilled Oatmeal

      • Servings: 1
      • Difficulty: easy

      Ingredients

      2/3 cup almond milk

      1/2 cup old fashioned oats

      1/2 cup plain or vanilla Greek yogurt

      pinch of cinnamon

      fresh fruit diced up (I love it with blueberries and strawberries)

      Directions

      Grab a mason jar or any container with a lid.  Combine the almond milk, oats, yogurt and cinnamon and cover tightly.  Refrigerate overnight and enjoy in the morning with the fruit stirred in gently.  You could also add a drizzle of pure maple syrup or agave nectar if you’re craving a little more sweetness.  Enjoy!

    • Chewy Rolo Cookies

      Rolo Ingredients

      If you are looking for something quick and easy (and tasty) to make for the big game or Valentine’s Day then give this recipe a try.  There are only 4 ingredients and they are not labor intensive to make at all.

      Ingredients

      1 box Devil’s Food cake mix (I like Duncan Hines)

      3 eggs

      1/3 cup vegetable oil

      3 packs of Rolos

      Directions

      Combine cake mix, eggs and oil in a large mixing bowl.  Place plastic wrap over top of bowl and refrigerate it for at least 2 hours to overnight.

      When ready to bake, preheat oven to 350 degrees.  Unwrap 12 Rolos at a time and then spray hands with non-stick cooking spray because the batter can be a little sticky.  Grab a tablespoonful of cookie dough and place one Rolo in the center, add a bit more dough to completely cover the Rolo and roll into a ball.  Continue to make 11 more cookies and place on cookie sheet lined with parchment paper.  Bake for 10-15 minutes.  If you like your cookies a little chewy then go for the shorter time and if you like them a little more crispy go for the full 15 minutes.  Take out of oven and allow to cool for 5 minutes on cookie sheet before carefully removing with a spatula.  Store in an airtight container for up to 5 days.
