      Hot Buttered Rum

      This is the perfect drink to serve this time of year.  You can prepare the batter ahead of time and the actual recipe takes less than 10 minutes to make.  So build a fire, grab your spouse and sip on this after the kids go to bed.  It’s a great way to unwind during the holidays.  Cheers and thanks for the recipe Mom!

      Hot Buttered Rum

      • Servings: 12-15
      • Time: 10mins active 12hrs inactive
      • Difficulty: easy

      Ingredients

      1 stick (1/2 cup) unsalted butter
      1/2 pound powdered sugar
      1/2 pound light brown sugar
      2 cups vanilla ice cream, softened
      Dark rum

      Directions

      1. In a saucepan over medium heat melt butter and sugars. Stir until completely combined, about 7 minutes.
      2. Remove from heat and fold in ice cream.
      3. Place batter in a plastic or stainless steel tub and cover. Freeze overnight.
      4. For each drink, put 2 tablespoons batter into a mug, add 1-2 tablespoons rum and 6 ounces of hot water. Stir and enjoy.

      My husband originally dubbed them ‘leaf piles.’  We had been dating for over a year and after celebrating the holidays together he still craved the corn flake wreaths with the cinnamon candies on top.  Instead of going to the trouble to dye the melted marshmallows green, he left it white and instead of forming cute little wreath shapes he just plopped the marshmallow and corn flake mixture down on a cookie sheet.  It was just like a Rice Krispie Bar, but with corn flakes.  So good!

      Corn Flake Treats

      Fast forward eleven years later and now our children are addicted to these gooey, yummy treats.

      If you are looking for something easy and somewhat healthy to make for Thanksgiving at the kids table then try this recipe.  My kids don’t care for pumpkin or pecan pie so this is what they will be munching on this year. They don’t even want Rice Krispies anymore, they are strictly Corn Flake treats addicts(aka Leaf Piles).  You could also add red, orange or yellow food coloring to the mix to make your leaf piles look more vibrant.

      Leaf Piles

      • Servings: 4-6
      • Time: 10mins
      • Difficulty: easy

      Ingredients:

      • 1 stick of unsalted butter
      • 1  10 ounce bag Jet Puffed Miniature Marshmallows
      • 5 heaping cups Kellogg’s Corn Flakes
      • Colored sprinkles (optional)

      Directions

      1. In a large pot, slowly melt the butter with the stove set on medium-low heat.  Be careful not to burn the butter.  Keep stirring until it is completely melted.

      2.  Add marshmallows and continue to stir until all the marshmallows are melted.

      3.  Pour Corn Flakes into melted marshmallows and stir until combined.

      4. On a baking sheet lined with parchment paper or sprayed with non-stick spray, drop cereal mixture by heaping spoonfuls.  You should end up with 12 leaf stacks.

      5. Sprinkle with colored sprinkles such as orange, red or yellow.  Enjoy immediately or store in an airtight container for up to 3 days.

    • Breakfast At Tiffany’s Anyone?

      How has your Halloween weekend been so far?  My husband and I went to a costume party last night.  Here we are.  🙂

      I love Breakfast At Tiffany’s and, of course, Audrey Hepburn.  So classy and beautiful on the outside and inside with a touch of humour sprinkled in her too.  This is a costume I have been dying to try, but never had the right occasion to wear it.  I definitely couldn’t pull this off at a family-themed party.  It ended up giving me an excuse to try out my Roland Mouret dress.  Remember that post?  (wink)

    • How Do You Like Them Apples?

      Apple Cupcakes

      If you are looking for an impressive way to use your abundant supply of apples this season, then look no further.  These apple cupcakes will knock the socks off any food-savvy guest.  I make these every fall for an annual apple tradition that started about six years ago.   My friend hosts dinner at her home and each of us brings a menu item that has apples as an ingredient.  I really don’t think I would be allowed in the door without them.  🙂

      Apple Cupcakes

      • Servings: 12 large and 12 mini cupcakes
      • Time: 1 hr 30 mins
      • Difficulty: moderate

      Ingredients:

      Cake batter:

      3 cups all-purpose flour

      1 3/4 tsp cinnamon

      1 1/2 tsp baking powder

      1/2 tsp salt

      1/4 tsp ground allspice

      1/4 tsp ground nutmeg

      1/4 tsp baking soda

      1 cup (2 sticks) unsalted butter, room temperature

      1 1/4 cups granulated sugar

      3/4 cup packed brown sugar

      3 large eggs

      2 tsp vanilla extract

      1 1/2 cups unsweetened applesauce

      2 medium Fuji or Gala apples peeled, cored and sliced into small cubes

      Frosting:

      1/2 cup (1 stick) unsalted butter, room temperature

      8 ounces softened cream cheese

      1 Tb vanilla extract

      Pinch of salt

      3 cups powdered sugar

      Red food coloring

      Topping:

      2 containers of red sprinkles (I used Betty Crocker)

      12 brown Tootsie Rolls

      12 green Tootsie Rolls

      Directions:

      Line cupcake pan with red Wilton large cupcake liners.  Preheat oven to 350 degrees.  Whisk first 7 ingredients together into a large bowl.  Set aside.  Combine butter and sugar in a standalone mixer with paddle attachment until light and fluffy.  Add eggs one at a time, combining throughly between additions.  Add vanilla.  With mixer on low, slowly add 1/3 of dry ingredients, then add 3/4 cup applesauce.  Add 1/3 more of dry ingredients and follow with remaining applesauce.  Add last batch of dry ingredients, mix until combined.  Fold in chopped apples.

      Using a measuring cup add enough cake batter to each cupcake liner until it reaches the top.  Smooth tops with a butter knife and place in center rack of oven to bake for 35-40 minutes or until toothpick inserted comes out clean.  Add remaining batter to miniature cupcake liners and bake those for about 20 minutes.

      Allow cupcakes to cool thoroughly before frosting.  (Can be made 1 day in advance.)

      For the frosting, add all frosting ingredients to a large bowl and mix until combined.  Tear off a sheet of paper towel and lay flat on countertop.  Pour all red sprinkles in center of paper towel.  Using an offset spatula, frost cupcakes one at a time.  Dip frosted cupcake immediately into pile of sprinkles rotating cupcake as necessary until all of top is covered in sprinkles.  Continue to frost and dip cupcakes until you have a shimmering dozen of red apples.  

      Lastly, take the brown Tootsie Rolls and shape into a stem shape.  You may need to microwave them for five seconds to soften them up a bit.  For the green Tootsie Rolls microwave for about five seconds each and use a rolling-pin to roll them flat.  Cut out leaf shapes with a knife and add details such as the veins.  

      Refrigerate cupcakes until a half hour before devouring.
