      Hot Buttered Rum

      This is the perfect drink to serve this time of year.  You can prepare the batter ahead of time and the actual recipe takes less than 10 minutes to make.  So build a fire, grab your spouse and sip on this after the kids go to bed.  It’s a great way to unwind during the holidays.  Cheers and thanks for the recipe Mom!

      Hot Buttered Rum

      • Servings: 12-15
      • Time: 10mins active 12hrs inactive
      • Difficulty: easy

      Ingredients

      1 stick (1/2 cup) unsalted butter
      1/2 pound powdered sugar
      1/2 pound light brown sugar
      2 cups vanilla ice cream, softened
      Dark rum

      Directions

      1. In a saucepan over medium heat melt butter and sugars. Stir until completely combined, about 7 minutes.
      2. Remove from heat and fold in ice cream.
      3. Place batter in a plastic or stainless steel tub and cover. Freeze overnight.
      4. For each drink, put 2 tablespoons batter into a mug, add 1-2 tablespoons rum and 6 ounces of hot water. Stir and enjoy.

    • Giving Thanks

      The bird is in the oven, the table is set and the desserts and cranberries are done.  In just a few short hours our families will arrive laden with more food and a few early Christmas presents.  I am enjoying the quiet for now, but I am thankful for family who are healthy, happy and for those able to spend the holiday with us.

      Tomorrow, we are doing something entirely different.  There will be no china, no crystal or silver; it’s something that means a lot to not only us, but the ones that we help.  A future blog post will cover this so stay tuned.  In the meantime, I hope you all have a blessed and wonderful Thanksgiving.

      Flag Cake

      What are your plans this 4th of July?  Travel?  Family gathering?  Backyard barbecue?  If you are looking for a statement dessert that serves a crowd then look no further.  This flag cake can be a new tradition to add to your holiday.

      Flag Cake (from Barefoot Contessa)

      serves 20-24

      Ingredients

      For the cake:

      18 Tablespoons (2 1/4 sticks) unsalted butter, at room temperature

      3 cups granulated sugar

      6 extra-large eggs, at room temperature

      1 cup sour cream, at room temperature

      1 1/2 tsp vanilla extract

      3 cups all-purpose flour

      1/3 cup cornstarch

      1 tsp salt

      1 tsp baking soda

      For the icing:

      1 pound (4 sticks) unsalted butter, at room temperature

      1 1/2 pounds cream cheese, at room temperature

      1 pound powdered sugar, sifted

      1 1/2 tsp vanilla extract

      To assemble:

      Approximately 1 half-pint blueberries (discard any moldy or overripe berries)

      Approximately 4 half-pints raspberries

       

      Directions:

      Heat oven to 350 degrees.  Butter and flour a rectangular sheet pan (18 x 12 x 1 1/2 inch).

      Cream the butter and sugar together until light and fluffy.  Add eggs 2 at a time, combine, then add the sour cream and vanilla.  Scrape down the sides and stir until smooth.

      Sift together the flour, cornstarch, salt and baking soda into a separate bowl.  Add the flour mixture to the butter mixture until just combined.  Pour into prepared pan.  Smooth the top with a spatula.

      Bake in the center of the oven for 30-35 minutes, until a toothpick come out clean.  Cool to room temperature.

      For the icing, combine the butter, cream cheese, sugar and vanilla, mixing just until smooth.

      Spread three-fourths of the icing on the top of the cooled sheet cake.  Outline the flag on the top of the cake with a toothpick.  Fill in the upper left corner with blueberries. Place 2 rows of raspberries across the top of the cake like a red stripe.  Put the remaining icing in a pastry bag fitted with a star tip (I used Wilton) and pipe two rows of white stripes below the raspberries.  Alternate rows of raspberries until the flag is completed.  Pipe stars on top of the blueberries.

      • Note:  Due to different sizes of the berries, the flag stripes may look a little wobbly, but that’s okay because it gives it the effect of a wavy flag…or whatever I want to tell myself since I also can’t pipe a straight line to save my life.  People won’t even notice after a drink or two anyway.  😉

      May Day is just a few days away and falls on May first every year.  For those of you who are not familiar with this tradition, it is a day to celebrate spring and spread some cheer to friends and neighbors.

      As a child, our family and neighbors were all busy assembling May baskets the morning of the first.  Sometimes we would use Dixie cups or wrap some construction paper into a cone-shape, then we would add a pipe cleaner handle and fill it with popcorn and candy.  Once we finished, we would walk to each house, leave the surprise on the doorstep, ring the doorbell and run like mad.  The rumor was if you were caught, the person chasing you could steal a kiss, but luckily that never happened.

      I will admit that the tradition of dancing around the Maypole seems a bit dated, but I still love the idea of doing nice things for friends and neighbors.  It doesn’t have to be anything fancy either.  For a kid, it’s exciting to hear the doorbell and find a treat waiting for him when he opens the door.

      I still create May baskets each year for my husband and daughters filled with their favorite candy.  Maybe we could try reviving this tradition throughout our own neighborhood(s).  You never know, the old usually becomes new again.
