      We skipped town last weekend.  It sounds a little crazy with everything that we have left to tackle before Christmas, but I’m thinking we might need to do this every December.  Galena, IL has always been the place to recharge the batteries.  The reception is complete crap out there so the family can’t stay glued to their devices and there isn’t much to watch on T.V. other than a fishing or hunting show (I grew up on these so don’t get me wrong I have nothing against them.)  It’s just the crackle of the fire, a good book to read and occasionally looking out the big picture window in the hopes of catching a deer or some other woodland creature wandering through the yard.  The kids are forced to use their (gulp) imagination.  They can explore in the woods, dust off a board game,  play cards or chess.  We pack lots of fun snacks and some good wine for Mom and Dad.  Life is good!

      I’d read somewhere that there’s an annual live window shop display and Luminaria a few weeks before Christmas so we made a plan to go.  Just the hubby, kids, dog and me.  There’s the Grinch we saw above.

      The window shops were okay.  It got pretty crowded along the streets so if you love shopping and don’t mind all of the people milling around then you would probably love it.  I would highly recommend a visit to see the candle display.  It’s a pretty incredible sight.  Especially if you venture to climb the steps to the top of town and look down on the little pathways lighted along the river and through the Main St.  Breathtaking.  Magical.  It puts the true meaning back into Christmas.  A time to spend with your loved ones and appreciate all your blessings.

      Here’s the view when we were almost to the top.  See the little lights down below?  Those are all the bags with real candles lit inside each one!

      IMG_5721Made it to the top!  Dress warm because it’s a chilly walk, but definitely worth it.  Here you can see the candles lined up along the river walk.

    • Brownie Cookies

      If you like brownies, then you’ll love these cookies.  The texture is not as fudgy as a brownie, but the flavor is spot-on.  These are surprisingly light and very addictive.  Just ask my daughter and husband.  Between the three of us, we inhaled just under a dozen.

      Another nice thing about this recipe is that it makes 48 cookies so there’s plenty to send off to work or swap in a cookie exchange.  Please note: you should make the dough the night before to give it ample time for chilling.

      Brownie Cookies

      • Servings: 48
      • Time: 1 hr

      Ingredients

      • 2 1/3 cups all-purpose flour
      • 2 tsp baking powder
      • 1/2 tsp salt
      • 2 cups granulated sugar
      • 3/4 cup vegetable oil
      • 1 cup unsweetened cocoa powder (spoon into measuring cup)
      • 4 large eggs
      • 2 tsp vanilla extract
      • 3/4 cup powdered sugar

      Directions

      1. In a medium mixing bowl whisk together the flour, baking powder and salt.  Set aside.
      2. In a large mixing bowl beat together the sugar and oil with a hand mixer.  Mix in cocoa powder.  Add in eggs and vanilla and blend well.
      3. Add flour mixture and combine until fully incorporated.  Cover dough with plastic wrap and chill overnight.
      4. The next day preheat the oven to 350 degrees.  Place parchment paper on a baking sheet.
      5. Take dough out of fridge and scoop 1/4 of it out and into a small bowl.  Put the large mixing bowl back in the fridge to keep the dough from getting too sticky.
      6. Pour 3/4 cup of powdered sugar into a small bowl.
      7. Scoop about a Tablespoon of dough and roll it into a ball using your hands.
      8. Drop the ball into the powdered sugar and roll it around until coated.
      9. Repeat these steps until you have 12 powdered sugar-coated balls on your cookie sheet.  It should look like snowballs.
      10. Bake for 13 minutes in the oven.  Allow cookies to cool for a few minutes before transferring to a cooling rack.
      11. Store in an airtight container for up to a week.

      This is not a Wine On Wednesday post.  Sorry.  Keeping reading though!

      Anyone remember Robin Leach and his introduction to each episode of Lifestyles of the Rich and Famous?  Watching that show as a kid always left me pining for more.  More house, more cars, more vacations, more, more, more.  Reality always stung a bit after my latest shopping spree and my wallet was empty though.

      It took me a long time to realize that keeping up with the Jones’ is no way to live.  My husband and I tried to when we were first married.  We both drove flashy cars, built a big house out in the suburbs, dined at lots of fancy restaurants in Chicago while we still lived down there.  It was great, until the housing market collapsed and we had our first child.  Boom.  That was a wakeup call.  Suddenly, we didn’t know if we could make both car payments.  I still had a student loan.  Our mortgage felt like this huge burden.  Plus, we were down to one income because we agreed that I would stay home with our daughter.  We spent many nights tossing and turning wondering if our house would be the next foreclosure in the neighborhood.

      After a big dose of humble pie we took a serious look at our expenses.  Where was our money going?  What can we cut back on short of electricity, diapers and food?  We created a monthly budget and set aside one Sunday night a month to go over upcoming expenses and how to pay for them.  The best financial advice came from Dave Ramsey’s book: Total Money Makeover.  That book has saved us over a hundred thousand dollars since we read it five years ago.

      I considered writing this post after the holiday hangover, but I figured there’s never a perfect time to write this so it might as well be now.  We’ve learned a lot in the 12 years that we’ve been married.  Today, my husband and I pay for our cars with cash, my student loan is long gone, we don’t pay for cable, I share my phone expense with my brother and mom so I’m only paying $30 a month and our grocery bill usually adds up to $120 a week.  If we want something, we pay 100% up front.  We don’t take out loans and we never have a balance on our credit card.  Luckily the credit card was never an issue for us, but that’s not the case for most Americans.  Finances are a lot like keeping a healthy diet.  You have to be disciplined.  Of course, there are times where we spend a little more than we normally do, but then we talk about it and get back on track the next month before the spending goes out of control.

      I don’t want to sound preachy or self-righteous.  Basically, I just want to share what I’ve learned so everybody can start feeling better about their money situation.  Here’s some tips to keep your bank account healthy this Christmas season (and maybe get a better night’s sleep):

      • If relatives ask for gift ideas for the kids, see if they would like to contribute whatever they are comfortable adding to pay for extra cirricular activities.  We’ve done this for our daughter’s birthdays too.  It’s helped to pay for golf and piano lessons.  That stuff can add up and it’s way better than another stuffed animal!
      • Cut back on those extra coffees from Starbuck’s or Dunkin’ Donuts.  You’ve probably seen the math before, but just one of those each week adds up to hundreds of dollars a year.  Save that money and throw it in a jar.  You can use that for Christmas shopping.
      • Skip the picture with Santa.  We used to spend close to $30 or more to see Santa at the mall and for what?  So we could stand in line for over an hour with crabby parents and kids.  I’m so over that.
      • Don’t skimp on generosity to those in need as well as friends, family and neighbors.  It may sound counterintuitive, but giving to others actually brings more money back to you.  Even if you don’t believe in karma, there is something to be said for those who won’t share their wealth.  Plus, I’m sorry, but being stingy just makes a person look like an a$$hole.
      • When you’re hosting and people offer to bring something over, whether it’s during the holidays or any time of the year take them up on it!  My brother-in-law always provides the wine for our Christmas gathering and our other relatives never arrive empty-handed with side dishes, appetizers or little hostess gifts.

    • Cookies For Saint Nick

      Here is the perfect cookie to bake this Christmas season.  These M&M cookies are easy to make, take the classic chocolate chip cookie up a notch, but most of all, they are delicious!  

      Be prepared to make more than one batch because they always disappear quickly.  You can even make the dough ahead of time and freeze it until you are ready to use.  Give it 24 hours to thaw in your fridge.  

      Christmas M&M Cookies

      • Servings: 24
      • Difficulty: easy

      Ingredients

      • 2 1/4 cups all-purpose flour
      • 1 tsp baking soda
      • 1 1/2 tsp cornstarch
      • 1/2 tsp salt
      • 3/4 cup butter, melted
      • 3/4 cup brown sugar, lightly packed
      • 1/2 cup granulated sugar
      • 1 egg
      • 1 egg yolk
      • 2 tsp vanilla extract
      • 1/2 cup milk chocolate chips
      • 1/2 cup Christmas M&M’s

      Directions

      1. Whisk flour, baking soda, cornstarch and salt in a large bowl.
      2. Whisk melted butter and sugars in a medium-sized bowl.  Add eggs, one at a time whisking slowly.  Add vanilla.
      3. Using a large spatula, pour wet ingredients into the large dry ingredients bowl.  Mix until combined.  Add chocolate chips and M&M’s.
      4. Put plastic wrap over the top of bowl and refrigerate at least 2 hours or overnight.
      5. Take bowl out of fridge and preheat oven to 325 degrees.
      6. Place parchment paper on a baking sheet and scoop about 2-2 1/2 Tablespoons of cookie dough.  Form it into a ball and place on cookie sheet until you have 9 rolled balls.
      7. Bake for 12-13 minutes.  Allow to cool on cookie sheet before using a spatula to place cookies on a cooling rack.
      8. Enjoy!
